Stir ingredients until they are mixed well. Cook onion mixture over medium heat until it reaches a boil, then cover and simmer for 2 hours, stirring intermittently.
- Once the onion mixture has simmered for two hours, remove the lid. If you would like a more refined texture, using a stick blender, gently pulse the mixture 5 - 6 times. This step is optional and only if you want a more spreadable consistency that still has some of the onions as texture. If this is to accompany a meat on an entree, i'd leave the onions as is for a more defined texture and visual appeal. The jam in my photo was refined.
- Continue cooking the onion mixture over a low simmer for an additional hour, lid off. Sitr intermittently. Jam should be thick in consistency when finished. Remove from heat. Taste and adjust seasoning if necessary. Cool for 10 minutes. Jam should be warm and ready to use. Keep remaining jam in the refrigerator in an airtight container for up to 5 days. You can eat and serve the jam cold as well. You can freeze the jam for up to 2 months but it may affect the consistency after thawing.
