Birthday cake for breakfast!
Well, sort of! I love all things birthday cake inspired. Who doesn’t feel like a kid again with a ton of sprinkles popping their glorious colors like a rainbow unicorn who just dusted you with magic?
Aside from the glorious display of the color spectrum, the rich vanilla flavor, buttery, cake-y texture of the french toast captures the ultimate realm of birthday cake flavor. Finish with some whipped cream and of course, more sprinkles and you too will be ready to celebrate.
Easier to make than cake!
Birthday cake french toast is an easy breakfast to make and fail proof. You only need some simple ingredients to pull this off. Get the kids involved or prep this ahead of time and surprise them with a fun, colorful breakfast.
Even if you don’t have kids in your life, this dish is sure to bring out the big kid in you. It’s hard to contain your excitement once eyes are lit up by the confetti sprinkles. The sprinkles take on the same effect once you cook your french toast as a birthday cake, melting and creating beautiful bursts of color.
My suggestion is to let the french toast soak overnight for the best sense of birthday cake, vanilla flavor. This also helps the sprinkles soften and become deep set into the bread. Once the slices are full of the delicious vanilla custard mix, the bread converts to a cake-like texture.
Celebrate every day like it’s your birthday.
It doesn’t have to be your birthday to make this dish, although it may feel like it is by the time you’re through. That’s okay. We should all celebrate life more.
Being quarantined has definitely put that into perspective for me. As someone who rarely takes a break and is always on full speed, I’ve learned to slow down…a little.
Every day is a gift, that’s why we call it the present. Corny? Yes, but oh so true. We should rise gratefully everyday we get to wake up. Celebrate; you are reason enough! We are all in ‘line’ but we don’t know when we’ll be called. If you needed any other reasons to make this dish, there ya go!
After making this, my daughter (who is 2) ran around all day elated saying ‘happy birthday!’ to everyone in the house. Everyday is a new chance, new beginning, new reason to start. It’s almost like everyday could be a birthday. So, Happy Birthday!
Birthday Cake French Toast
If you love all things birthday cake, this play on french toast is definitely for you. Full of rich vanilla flavor, drizzled with cream cheese icing, finished with sprinkles and whipped cream make this birthday cake french toast irresistible to your kids or the kid in you! Celebrate any day of the week with this fun birthday inspired breakfast.
Ingredients
- 8 Pieces Thick Sliced Texas Toast
- 5 Eggs
- 1/2 Cup Brown Sugar
- 1 Cup Heavy Cream
- 2 Tsp Vanilla
- Pinch Salt
- Rainbow Sprinkles
Instructions
- Step One
Crack eggs into a large mixing bowl and whisk lightly. Add brown sugar, salt, cream, and vanilla to the eggs. Mix until well combined.
Step Two
Dip slices of texas toast into custard mixture one at a time, fully submerged, and place slices onto a sheet pan or in a baking dish. After dipping each slice, use sprinkles on each side and press sprinkles into bread slightly so they stick with the back of a spoon.
Step Three - Important!
Let custard soak into bread on sheet pan covered with plastic wrap minimum one hour, however, for best results I suggest soaking overnight.
Step Four
After bread slices have finished soaking, heat a cast iron skillet over low medium heat or use an electric griddle on 350 F. Once pan is heated, melt a tablespoon of butter until bubbly. Place each slice into the pan, while giving space to cook (I could only do 4 at a time). Cook on each side about 3 minutes or until golden brown.
Step Five
Top with cream cheese icing drizzle ( more sprinkles, and whipped cream. Light a candle and make a wish! These would also be just perfect with butter and syrup.
Notes
Cream cheese icing for drizzle:
4 oz cream cheese, softened
1/2 tsp vanilla extract
2 cups powdered sugar, sifted
2 tsp milk or cream
pinch salt
Using a fork or hand mixer, stir cream cheese until smooth. Add vanilla and salt. Mix well. Slowly add the powdered sugar mixing each addition thoroughly resulting in a smooth consistency. Add the 2 tsp of cream to thin mixture. Put icing into a piping bag or into a plastic ziploc toward one corner, then cut a small portion off the corner to drizzle.

You could make this up to two hours in advance without cooking, soaked in the custard mixture. If you want to make further ahead, I’d cook it and freeze it when completely cooled. You could then take out the slices and reheat on a griddle or frying pan. Doing this freezer method may change the texture of the finished product slightly.
